There's something about the warmer weather that automatically equates barbecue for dinner every night of the week. Hubby does most of the cooking? Easy clean-up? That's a weekday win in our books! Grilled Thai Coconut Chicken Skewers

Let's face it, we'd eat anything doused in peanut sauce (it's totally addicting). But these grilled Thai coconut chicken skewers are next level! They are super simple to throw together and can even be made in advance and left to marinade to soak up all those delicious Thai flavours. That's what makes these a great option for a weeknight meal. These would be great paired with a cold noodle salad or fresh spring rolls.

Grilled Corn on the Cob with Chili Lime Butter

Once you have corn on the cob cooked on the grill, you'll never go back. This recipe takes grilled corn on the cob up a notch by serving it with a chili lime butter (yum!). Corn on the cob is super quick to cook on the barbecue and would be a great side dish for Taco Tuesday! It would also be a great option to cook for a crowd at a backyard barbecue party.

Margarita Grilled Shrimp

Did someone say Margarita?! Count me in! I'm a huge fan of any recipe that uses lime, whether it's food or drinks, so this one is a winner in my books. Plus, this sounds like a great excuse to have a Margarita.

To make this a meal, simply use longer skewers and make sure to have a serving's worth of shrimp per person. I think this would be so delicious served with cilantro lime rice or a big hearty salad.

Grilled Chicken Asparagus Pesto Pasta Salad

I love a good pasta salad in the summer! It's one of my favourite things to bring to a backyard barbecue party since it's so versatile and it travels super well. It's a great option to pack for a beach picnic, too. This particular recipe would be great since it includes protein!

Mediterranean Grilled Chicken with Dill Yogurt Sauce

I love anything with Mediterranean flavours for the spring! This grilled chicken recipe is no exception. The dill yogurt sauce brings it to the next level! The slightly spicy chicken and cool yogurt sauce are a match made in heaven.

This is a great weeknight option because you can marinate the chicken in advance and boneless chicken thighs take no time at all to cook on the grill. You could serve this with just pita bread and make a meal out of it. So simple but so delicious.
